Let's make gingerbread!

Preheat the oven to 180C.

Line two baking trays with greaseproof paper.

Roll the dough out to a 0.5cm thickness on a lightly floured surface.

Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.

Bake for 12–15 minutes, or until lightly golden-brown.

When cooled decorate with the writing icing and cake decorations.
Icing
Ingredients
1 egg white
200g icing sugar sifted
1 teaspoon lemon juice
Method
- Place egg white in a clean, dry bowl and beat with an electric mixer until soft peaks form.
- Gradually add icing sugar and beat until stiff peaks form.
- Add the lemon juice and stir until combined.
- Spoon the icing into a small freezer bag.
- Snip the end of one corner from the freezer bag and pipe the icing onto cooled biscuits.
